Bacon and Two
Serves 1
What You Need:
- 2 slices of antibiotic and hormone-free bacon (check the label and look for the most natural ingredients possible)
- 2 eggs (aim for local and pasture-raised, but settle for free-range organic if this isn't possible)
- A large frying pan
- A little bit of water
Instructions:
- Place your strips of bacon into the frying pan, trying to lay each slice out flat and avoid folding. Ensure there is some space between each piece.
- Add just a little bit of water into the pan (enough to barely cover its base) and place it over medium-high heat until simmering. This helps to render the bacon fat and ensure a tender final product.
- Once the water is simmering, reduce the heat to medium and allow to cook to your liking. For floppy bacon (Maya-style), go for about 3 to 5 minutes. If you are like my dear father, it'll take around 8 to 10 minutes. Be wary of sizzling bacon fat, and use a splatter screen if possible. Transfer your bacon onto a plate.
- Crack and scramble two eggs in a bowl. Salt and pepper to taste. Wipe out some of the bacon grease from the pan, lower the heat slightly, and add the eggs. Wait for the edges of the eggs to set before pushing them inward gently with a spatula. Move the raw egg in the pan to this space by means of the spatula and tilting of the pan. Continue this process until all of the egg is set to your liking. Transfer onto a plate and season to taste.
