Bacon and Two


Happy Saturday, all! One of my favorite parts of the weekend is the opportunity to sit down and savour a hearty breakfast after an energizing workout. Or maybe before, if I'm feeling really hungry. This post is in honor of a classic, delicious meal that you can whip up in just a few minutes: Bacon and Two! Of course, the doneness of the bacon prepared in my household has always been a topic of debate. I'm partial to a floppy texture, while my dad refuses to eat anything but browned, firm slices. Either way, there is no denying that bacon is a real treasure. How convenient that it fits right into the Primal Eating Plan, which I hope to explain in an upcoming post! Rich with plenty of fats, bacon is a great way to start off your day. Top off your serving with a few eggs (an abundant source of protein) scrambled in the leftover grease, and you've got a perfect breakfast. Here's my simple recipe:

Serves 1
What You Need:

  • 2 slices of antibiotic and hormone-free bacon (check the label and look for the most natural ingredients possible)
  • 2 eggs (aim for local and pasture-raised, but settle for free-range organic if this isn't possible)
  • A large frying pan
  • A little bit of water
Instructions:
  • Place your strips of bacon into the frying pan, trying to lay each slice out flat and avoid folding. Ensure there is some space between each piece.
  • Add just a little bit of water into the pan (enough to barely cover its base) and place it over medium-high heat until simmering. This helps to render the bacon fat and ensure a tender final product.
  • Once the water is simmering, reduce the heat to medium and allow to cook to your liking. For floppy bacon (Maya-style), go for about 3 to 5 minutes. If you are like my dear father, it'll take around 8 to 10 minutes. Be wary of sizzling bacon fat, and use a splatter screen if possible. Transfer your bacon onto a plate.
  • Crack and scramble two eggs in a bowl. Salt and pepper to taste. Wipe out some of the bacon grease from the pan, lower the heat slightly, and add the eggs. Wait for the edges of the eggs to set before pushing them inward gently with a spatula. Move the raw egg in the pan to this space by means of the spatula and tilting of the pan. Continue this process until all of the egg is set to your liking. Transfer onto a plate and season to taste.
