Simple, Roasted Cauliflower Rice

I woke up this morning with the sun streaming through the blinds, the smell of coffee, and a feeling somewhere along the lines of "everything hurts and I'm absolutely exhausted." Last night, I had a few of my friends over to celebrate the end of school; we ate Paleo Pizza, played games, and watched The Greatest Showman. It was an absolute blast! However, I was up until eleven, so I didn't get as much beauty sleep as I may have liked. I paid dearly for it today. Tired and aching everywhere, I didn't have an appetite. My back hurt. I didn't really want to do anything.
Most unfortunately, my stomach just wasn't up for the sumptuous, sizzling sausages my mom cooked up for dinner - therefore, I turned my tired body to the freezer and whipped up one of my comfort foods.
My little sister just finished up health class at school. During the nutrition unit, each student was asked to name their comfort food. According to Abby, these ranged from French crueler doughnuts to milk chocolate to greasy hot dogs. Everyone gawked, shocked, when she announced that her favorite was blue cheese. Her best friends, Hailey and Ellie, confirmed this funny story for me (beware - older siblings are ever suspicious). Abby's bizarre, but I guess this weirdness runs in the family, as my comfort food just happens to be cauliflower rice.

Yes. I know it sounds kind of pathetic. But think about it. Cauliflower rice is scrumptious! It is so easy and convenient. You just purchase a bag or twelve of Green Giant's Riced Cauliflower, throw it on a lined pan, and bake it with a drizzle of oil! Although I pretty much summed up the recipe in that one sentence, you can find more specific instructions below:

Simple, Roasted Cauliflower Rice
Ingredients 

  • 1 bag of Green Giant's Riced Cauliflower
  • Olive Oil
  • Salt and Pepper to taste
Execution
Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper. While it is still in the sealed, microwavable bag, bash your cauliflower rice against a counter or hard surface. As it is frozen, this action will help to separate the large block of veg into smaller pieces. Open up the bag, and empty the entirety onto the pan. Drizzle cauliflower rice generously with olive oil and sprinkle with salt and pepper. Insert the baking sheet into the oven for about 30 minutes, or until hot and soft with some golden brown bits. Spoon into a bowl and enjoy! If your tummy is up for more than these simple seasonings, drizzle your rice with lemon juice or perhaps a squeeze of sriracha. Cauliflower rice is also delicious with a fried egg on top, if you're hungry. Or, if you are my crazy sister, top it with blue cheese crumbles.

Tomorrow, I will hopefully be back to normal. I was really disappointed about those sausages - maybe my mom cooked an extra one for me?
