Meatza Bites!

Morning, all! The school year is fast approaching - I can't believe it! It feels as though summer break just started, but before you know it, I'll be back in the classroom and suffering from a chronic case of homework. Ah, well. It was inevitable. I'm not a huge snack person, but after a long day at school, I occasionally need something to tide me over until dinner.

Nuts, which we learned about a few posts back, are delicious and nutrient dense, so they're a good option. And those low-carb Kirkland protein bars I've talked about several times are practically perfect in every way. But they both get old, and FAST. Today, I thought I'd share a recipe from my dad, who is a snack master. At a Costco visit last weekend, he picked up Citterio Salumi Pronti Genoa and Provolone packets. Fancy name, but they are literally little trays of salami and cheese slices; alone, they're alright. Not my favorite. Then Dad experimented a little, and I tried his new invention this morning - oh my goodness, was it good!

Introducing Meatza Bites, featuring Citterio Salumi Pronti Genoa and Provolone! If you aren't familiar with the term, 'Meatza' is essentially a Ketogenic pizza with a crust made of - you guessed it! - meat. It's surprisingly good, and this version is incredibly simple. We didn't have any marinara or tomato sauce on hand, but you could surely add a dab between the meat and cheese layers. Enjoy this afternoon snack! I hope it helps you with that Calculus homework, but I can't make any promises.

Meatza Bites! - Serves 1
Ingredients

  • 1 snack packet of Citterio Salumi Pronti Genoa and Provolone (at Costco!)
  • Italian herb seasoning
  • Optional tomato sauce
Execution
Lay your slices of Genoa salami on a microwave-safe plate. If using, add a dollop of tomato or marinara sauce. Top each with a slice of Provolone cheese from your packet. Sprinkle with Italian herb seasoning. Microwave on high for three or four 10-second intervals, until the cheese is sufficiently melted. Let cool slightly. Enjoy this simple, tasty, and Primal snack!
