Homemade, Healthy Whipped Cream
A few years back, my family and I traveled to Edinburgh, Scotland for an amazing European adventure! We were there to see the sites, learn a ton, and eat like royalty, but we were also visiting our British friends, the Horn family. One evening, after we had traveled by train to the Horn's home back in England, they whipped up the most delicious dessert. I had never heard of it before. It was called Eaton Mess, and was composed of strawberries fresh from the garden, whipped double cream, and shattered meringue. I don't even like meringue, and this stuff was fantastic! Before our flight home, Mom even purchased Eaton Mess flavored chocolate! Please note that this was before my Primal habits had been established.
This is just one of the instances in which my childhood love of whipped cream is evident. At birthday parties, I was no stranger to Grandma spraying some of the stuff into my open, salivating mouth. The whipped cream on my Starbucks Frappuccino was heavenly. I put whipped cream on my pancakes, and while my parents never let me, I probably would have gobbled it up by the spoon.
When I browsed through our England-Scotland photos this morning, I realized with a pang that I missed whipped cream. So I decided to take matters into my own hands. Now, whipped cream isn't exactly hard to make. The name says it all; you literally whip heavy cream until it peaks and becomes fluffy. But I didn't want just any whipped cream. I wanted it to be absolutely delicious, and healthy enough to fulfill my childhood dream of licking it from the spoon. Here is my recipe for Homemade, Healthy Whipped Cream:

Homemade, Healthy Whipped Cream
Ingredients
- 1 cup heavy whipping cream
- A little less than 1 Tbsp Lakanto Golden Monk Fruit or Swerve
- A dribble of almond extract (because vanilla is, well... vanilla). Really, though, any extract goes.
Execution
Combine all of your ingredients in a decent sized bowl - you don't want the cream to fly everywhere! I've been told that cold bowls help too, but I've never tried that. Whip, preferably with a hand mixer, until peaks form and it resembles whipped cream. If you have to, use a whisk. Get your arm workout in for the day! It does take a bit of time, so be patient, dear reader. Enjoy your whipped cream by the spoon, on a Keto dessert, or on a drink. Make your own Eaton Mess by combining some whipped cream with strawberries and Keto meringue. I used mine to top off this Keto Green Tea Frappuccino, and it was stupendous! The whipped cream lasts for a few days in the fridge, and is even good frozen.
If you are aren't feeling like adulting today, I suggest spooning the whipped cream into a plastic bag, cutting a hole in the corner, and piping it into your mouth. If you close your eyes, maybe you could imagine the delicacy coming from a can, like when you were five. In the words of Henry David Thoreau, "This world is but a canvas to our imagination."
