Toad In The Hole, Primal Style

First of all, Happy Father's Day! Make sure to give your old man a big hug to celebrate; maybe you could even make him this Primal Toad In The Hole for brunch! There are two typical ways that people around the world think of a Toad In the Hole. The first way is the traditional English dish, in which sausages are cooked in Yorkshire pudding batter. Here in America, however, we associate the title Toad In The Hole with a different meal altogether. Picture instead a thick slice of bread that has a hollowed out circle in the center. An egg is cracked into that hollow, and the American Toad In The Hole is pan fried until the egg is cooked through. I'd imagine it's pretty good, but I've never had it. As with avocado toast, I had stopped eating bread before I could try it. But today, I thought I should change that. Why shouldn't I be able to enjoy this scrumptious dish? So I reinvented it, as you can see in my picture to the left. Aren't you proud of me, dear reader? I accomplished one of my goals for this month, which was to take my own pictures for The Avocado and Me. Score! A yummy recipe, AND a pretty picture!

Toad In The Hole, Primal Style - Serves 1
Ingredients

  • 1 large bell pepper (the most robust you can find)
  • 2 large eggs
  • 1 Tbsp coconut oil
  • A handful of Baby Arugula, Spinach, or Kale
  • A light vinaigrette
  • Salt and pepper to taste
Execution
This one is pretty easy! Melt your coconut oil in a large pan on medium heat. While your oil is warming up, wash and cut your bell pepper. Cut two thick slices through the bell pepper, ensuring that you keep the ring shape intact. You can save your remaining bell pepper for a snack later. Once the oil is heated, lie your two bell pepper rings in the pan and cook for about 2 minutes. 

Beware flying fat! After two minutes, flip your bell pepper rings. Crack one egg into each ring, and put a lid on the pan; this way, the top of the egg will cook. Don't worry if some of your egg seeps out the bottom of bell pepper - it's completely normal. Fry eggs until the whites are cooked through and the yolks reach the desired doneness. Use a spatula to move your Toad In The Hole peppers from the pan and onto a plate. Surround with a bed of leafy greens; drizzle your arugula, kale, or spinach with a light vinaigrette. Salt and pepper your eggs to taste. Enjoy!
