The Best Bacon Asparagus Quiche
I have this really vague memory of going to Panera Bread with my dad, when I was maybe six or seven years old. This particular visit was after one of my Saturday voice lessons, and I was starving. Panera was unknown territory for me - I'd never been before, and I was amazed by the baskets of baguettes and counters covered by fresh ciabatta. It smelled heavenly in that restaurant. My dad and I sat down at a booth, and were soon served a warm spinach quiche to share. Let me tell you: that was the best darn quiche I've had in my life. Or maybe I was just really, really hungry.
When my friend Maddi texted me the other day that she had just had the most delicious Bacon Asparagus Quiche, this distant memory resurfaced. Ah, quiche. How I have missed it. And bacon and asparagus? Well, I love spinach, but this new combination sounded so much better! You inspired me, Maddi. And so I created my very own recipe for the Best Bacon Asparagus Quiche.
To be fair, I don't know if it is actually the best Bacon Asparagus Quiche, because I haven't had real quiche in years. I don't really have anything to compare my recipe to. But you know what? The name 'The Best Bacon Asparagus Quiche' just has a nice ring to it, so we're going to go with it.
I'd like to give a big shout out to ruled.me, the fabulous site from which I got the recipe for the ketogenic crust. It was absolutely perfect for today's recipe, and it almost tasted like real pie crust! Congrats, ruled.me. Maddi, I'd also like to thank you for inspiring me! It's amazing to have friends who are so encouraging and kind. I hope this quiche is just as good as the one you tasted at the little, quaint French bakery!
The Best Bacon Asparagus Quiche - Makes 8 slices
Ingredients:
- 1 recipe of ruled.me keto pie crust - make sure not to separate the dough into sections, as the original recipe states. It was intended for individual tarts, but we are making one big pie. You can also use a different recipe for a ketogenic pie crust, or, if you aren't eating Primally, you can just use a traditional one.
- 6 large free-range eggs
- 1 cup grated Parmesan
- 1/2 cup heavy whipping cream
- Steamed 1/3 - 1/4 lb. of chopped asparagus. If you have a microwave steamer, this will take about 3-4 minutes to steam. Make sure to snap off the woody ends!
- 6-7 slices of bacon, cooked and crumbled. You can also microwave the bacon. 6-7 pieces will take about 4 minutes or so.
- Salt and Pepper, to taste
- 1/2 tsp. + thyme
- A sprinkling of nutmeg
Execution:
Preheat the oven to 350 degrees. If using, make your keto pie crust according to the ruled.me instructions. Remember - don't separate the dough! If you want a little more flavor in your quiche crust, I suggest adding a dash of thyme. Press your dough into a typical pie dish. Note that the dough will be stretched pretty thin, and that this is perfectly okay. Bake the crust for 12 minutes, according to the recipe's instructions. After removing the pie pan from the oven, allow the crust to cool slightly. Increase the oven temperature to 375 degrees Fahrenheit. Meanwhile, make your egg mixture: scramble the six eggs, and stir in the heavy whipping cream. Add 1/2 tsp. of thyme, a sprinkling of nutmeg, and salt and pepper to taste. Whisk well.
Mix the chopped asparagus and the crumbled bacon, and spoon into the pie crust. Sprinkle 3/4 cups of your of Parmesan on top of the bacon and asparagus while reserving the remaining 1/4 cup. Pour the egg mixture over the veggies, meat, and cheese. It is highly likely that the egg mixture will seep underneath the rather short crust. This is to be expected, is fine, and shouldn't make your quiche soggy in the slightest. Place your Bacon Asparagus Quiche in the oven, and bake for 25-35 minutes, or until it jiggles slightly in the middle and an inserted knife comes out clean. Remove the quiche from the oven, and sprinkle with the remaining cheese. You can choose broil the cheese on top instead, if you'd like. Slice into eight pieces, and enjoy!
My dad suggested that to make the quiche a little creamier, you could add cubes of softened cream cheese to the egg mixture. We haven't tried this yet, but I'm sure it would be phenomenal!
